Apple & cranberry muesli wedges

Apple & cranberry muesli wedges

Servings: 8
Preparation time:20 minutes 
Cooking time: 35 minutes

30g (½ cup) digestive bran
35g (½ cup) desiccated coconut
115g (1 cup) rolled oats
50g (¼ cup) coconut sugar (or brown sugar)
5ml (1 tsp) cinnamon
5 ml (1 tsp) baking powder
30g (100ml) dried apple wedges, chopped
30g (¼ cup) cranberries in cups
1 large egg
60ml (¼ cup) honey
250ml (1 cup) plain yoghurt
2 apples (250g) grated with skin on

Preheat the oven to 180ºC. Grease a 20cm round cake tin and line the base with baking paper.
Combine the bran, coconut, oats, coconut sugar, cinnamon and baking powder in a mixing bowl. Stir in the chopped dried apple and cranberries.
In a separate jug combine the egg, honey and yoghurt. Add this to the dry ingredients with the grated apple, and stir until just combined.
Pour the mixture into the tin and bake for 35 minutes or until baked through. Allow to cool, then cut into wedges.
