B-well Pea Pesto Pasta with Balsamic Roast Tomatoes

Serves 4

Ingredients:
1 ½ cups frozen peas
1 cup basil leaves
¼ cup pine nuts / sunflower seeds / cashews
2 cloves garlic, peeled
1 lemon, juiced
½ cup parmesan / pecorino / hard cheese
¼ cup B-well Extra Virgin Olive Oil
1 tbsp B-well Original Tangy Mayonnaise
1 punnet vine tomatoes
2 tbsp balsamic glaze   
1 pack pasta of choice  
Salt and pepper
Fresh mint and basil to serve                          
 
Method:
Fill a pot with salted water and bring to the boil. Preheat you oven to full with the grill on.
Cook your peas for 30 seconds in boiling water and remove ( you will use the same water to cook the pasta ) Place the peas in a processor, and add the basil, pine nuts, garlic, lemon, parmesan, B-well Extra Virgin Olive Oil, and B-well Original Tangy Mayo. Blitz until all ingredients have come together, and is relatively smooth. Add another splash of Olive Oil if needs be. Taste, and adjust seasoning. Set aside.
Prepare your pasta as per on packet instructions. While the pasta is cooking, place your vine tomatoes on a roasting tray, and drizzle with Balsamic Glaze. Season with salt and pepper, and roast until charred and blistered.
Toss your freshly cooked pasta with the pea pesto, and serve the vine tomatoes on top. Garnish with fresh mint and basil, and a dusting of parmesan!
 
Chef's info:
This pesto is quick and snappy to prepare, and delicious in so many ways! It is also versatile and allows you to use what you have at home – swap out the pine nuts for sunflower seeds or cashews, and the parmesan can be swapped for pecorino, or any of your favourite hard cheese.
Even though this is already a Meat-Free Monday Meal, simply swap out the parmesan cheese for a Vegan or Plant-Based Cheese, for a delicious Vegan meal!
You could blister the tomatoes in a scorching hot pan too, for a quicker option. You could also add some garlic and caramelised onion to bulk the meal even further!
