Clover Classic Berry Galette

Clover Classic Berry Galette
Serves: 4-6
Baking time: 25-30 minutes
For the crust
1 ½ cups flour
1 tsp sugar
Pinch of salt
8 tbsp cold butter
3 tbsp ice water
For the filling
2 cups mixed berries
½ cup icing sugar
1 tsp cornstarch
Squeeze of fresh lemon
200g cream cheese
1 tub Clover Classic berries dairy snack
1 large egg mixed with a dash of milk
Preheat the oven to 180C
To prepare the crust, combine the flour, sugar and salt in a large bowl. Add the butter and rub into the flour. Drizzle over the water and mix until a dough forms. Wrap the dough up and place into the fridge to rest for a few minutes
To prepare the filling, whisk together the cream cheese, corn flour, classic dairy snack and icing sugar. Fold in berries and squeeze fresh lemon over.
Roll the dough out onto a floured surface, into a circular shape. Transfer over onto a lined baking tray. Add the filling to the centre of the pastry and fold up the sides of the pastry, over the berry filling, leaving the centre open. Brush the pastry with eggwash and bake the galette for 25-30 minutes or until the crust is golden brown in colour. Dust with icing and garnish with more beries. Slice and serve.
