Clover Classic Curried Prawns

Clover Classic Curried Prawns 
Serves: 4-6
Cooking time: 15-20 minutes
500g prawns, deveined
2 tbsp Clover Classic Spread
1 onion, sliced
2 cloves garlic, chopped
1 tbsp fresh ginger, grated
Few curry leaves
1 tsp each cumin seeds/ground and coriander seeds/ground
2 tsp garam masala
1 tsp chilli powder
2 tomatoes, puree’d or ½ cup tinned chopped tomatoes
½ cup cream/plain yoghurt
Squeeze of fresh lemon
Fresh coriander for garnish
Poppadums for serving
Heat a glug of oil in a saucepan and add in the onion, curry leaves, cumin and coriander. Allow to cook until the onions are softened.
Add in the garlic, ginger and spices and cook for another minute. Add in the tomato puree and bring to a light simmer. Season with salt and pepper and stir in the cream/yoghurt and the prawns. Cook until the prawns turn pink and garnish with a squeeze of lemon and fresh coriander.
Serve with poppadum’s and your choice of sides.
