Clover Classic Custard Burfee Cupcakes

Clover Classic Custard Burfee Cupcakes

Serves: 4-6
Baking time: 20-25 minutes

125g butter, softened
125g sugar
200ml milk
100ml Clover Classic Custard
2 eggs
1 tsp vanilla essence
250g Cake Flour 
1 tsp baking powder
pinch of salt
1 tsp ground cardamom
1 tsp rose water
For the icing:
120g butter
120g icing sugar
2tbsp milk
½ tsp ground cardamom
Preheat the oven to 180C
Beat the butter and sugar together until light in colour. Stir in the eggs, milk, Clover Classic custard and vanilla essence and mix to combine. Fold in the flour, baking powder, salt, cardamom and rose water. Mix gently and be careful to not overmix
Pour the batter into prepared cupcake cases and bake in the oven for 20-25 minutes, or until a skewer comes out clean.
To make the icing, cream together the butter and icing sugar with milk. Add the ground cardamom and mix well to combine. Ice the cupcakes once they have cooled and garnish as desired.
