Clover Feta and Pilchards Breakfast Strata

Clover Feta and Pilchards Breakfast Strata
Baking time: 20-25 minutes
Serves: 3-4 


Ingredients 
1 red onion, finely chopped
1-2 large zucchini, cut into cubes/grated
1 tin Pilchards in tomato sauce
1 tbsp mixed herbs 
2 cups ciabatta/lefotver bread, cut into cubes
1-2 disc Clover Feta cheese (black pepper or herbs flavor), crumbled
4 eggs
1/3 cup milk
½ cup plain yoghurt


Method
Preheat the oven to 180C.
Heat a saucepan with a glug of butter or oil and add in the onion. Saute until softened. Add in the zuchhini and season with salt, pepper and mixed herbs. Cook for minute until zucchini starts to soften, then add in the pilchards and mix well. Cook for a few minutes. 


Transfer the mixture over to a ovenproof dish if your pan cannot go into the oven. Add in the bread cubes and sprinkle with feta cheese. 


Mix together the eggs, milk and yoghurt in a separate bowl, season with salt and pepper and pour over the pilchard mixture. Bake in the oven for 20 minutes or until the bread is golden brown in colour. 


Serve with a salad and more feta crumbled over.
