Clover Mini fruit cakes with Clover Classic Custard

Clover Mini fruit cakes with Clover Classic Custard
 
INGREDIENTS
700g mixed fruit
3 cups fruit juice
1 tbsp brandy/rum (optional)
3 cups self raising flour
Clover Classic Custard for serving

METHOD
Soak the dried fruit in the fruit juice, preferably overnight. Stir the flour into the soaked fruit and mix well.
Spoon the mixture into a greased muffin tray and bake for 45 minutes or until a skewer comes out clean. 
Serve with Clover Classic Custard
