Clover Mushroom Stroganoff

Clover Mushroom Stroganoff
Cooking time: 15-20 minutes
Serves: 3-4

3 knobs butter
1 onion, sliced
2 cloves garlic, chopped
1 tbsp paprika
300g mushrooms, sliced
1/4  cup vegetable/mushroom stock
½ cup Clover Fresh milk
1 tbsp Dijon mustard
½ cup sour cream
Salt and pepper to taste
Handful fresh parsley, chopped
Parmesan/white cheddar cheese for garnish
Rice or pasta for serving
Melt the butter in a saucepan and add in the onion. Cook until translucent then add in the paprika, garlic and mushrooms. Cook until the mushrooms are golden brown in colour.
Add in the veg stock, fresh milk, mustard and sour cream and season with salt and pepper. Give it a good stir and bring to a light simmer.
Once the liquid is reduced, stir in the parsley. Scoop onto pasta or rice and finish off with cheese and/or more parsley.
