Cooking Prawns

1 Tbsp olive oil 
2 Tbsp butter
3 cloves of garlic
1 green or red chilli, finely chopped (optional)
1 lemon, juiced
salt and freshly ground black pepper

Add the olive oil, butter and garlic in a cold pan, then place over a medium heat. Allow the butter to melt and become frothy before adding the prawns. Allow them to cook for a minute before tossing them in the pan, cooking for another minute and a half or until all the prawns have curled and the flesh has become opaque. 
Turn of the heat and add the juice of the lemon seasoning with salt and freshly ground black pepper. Toss again to coat evenly before serving. 
If you wanted to add chilli for some heat it can be added just before turning the heat off.
