Phyllo Cheese Twirls

Phyllo Cheese Twirls
Serves 4

1 pack Phyllo pastry sheets
200g feta cheese
150g Kefalotiri (Greek cheese), grated
5 Tbsp Greek youghurt
1 egg
20g mint
35g dill
1 clove garlic, finely grated
80g butter
zest of 1 lemon
salt, to taste
Cooking method:
Preheat oven to 190 degrees.
Melt Butter on a low heat - once heated add a little warm water.
In a bowl, mix together feta, kefalotiri, yoghurt, lemon zest, garlic, dill, mint, salt and yoghurt. Refrigerate for a few minutes.
Take out 2 sheets of phyllo. Brush with melted butter and water mixture. Spread about 5 teaspoons of the mixture along the bottom of the phyllo. Loosely fold phyllo over the mixture until you get to the end, forming a long log. Spiral the log carefully to form a swirl. Place on baking tray. Repeat with the rest of the mixture. Brush with melted butter on top.
Bake for 15 minutes.
Serve 4 with a lemon wedge.
