Roast beef with Bacon Brussel Sprouts

Roast beef with Bacon Brussel Sprouts
Recipe by Chef Farrel Hirsch
Cooking time: 45-50 minutes 
Serves: 4-6


Ingredients 
For the Roast Beef


1kg silverside beef 
10g rosemary 
2 carrots 
1 onion 
1 garlic bulb 


For the Bacon and Brussel sprouts
1 cup streaky bacon, chopped
250g Brussel Sprouts
Salt and pepper
Oil


For serving
Honey Roasted Carrots
Gravy 


Method
Preheat the oven to 180C. 
Heat the oil in a large pan and sear off each side of the beef. Cut vegetables roughly and place beef on top of vegetables. Place into the oven to cook. For every 1kg beef you cook 20 minutes for medium rare and another 10 minutes resting time. 


To make the Bacon and Brussel sprout side dish, add a touch of oil to a large pan. Add in the bacon and allow the bacon fat to render. Add in the Brussel Sprouts and cook until they have browned on each side. Serve with Roast beef, Yorkies, Honey Carrots and gravy.
