Strawberry Fridge Tart

For the crust
1 packet tennis biscuits, crushed into fine crumbs
4T butter, melted
 
For the filling
2 X 80g Woolies strawberry flavoured jelly
2 cups, just boiled water
2 cups cream
1kg double cream Ayrshire Strawberry yoghurt
2T icing sugar
250g strawberries
1 chocolate flake
2 Woolies milk chocolate ripple bars
 
Combine the tennis biscuit crumbs and butter before packing into a springform tin, coming up the sides.
Add the jelly powder to the just boiled water, mixing together until the jelly powder has complete dissolved into the water, place in the fridge to chilli but not set.
In a separate bowl whip 1 cup of cream until stiff peaks form then add the yoghurt and combine together before adding the chilled jelly mixture. Whip together until very well combined then pour into the biscuit base. Place in the fridge to set for 4-6 hours or until set with a gentle wobble. Carefully remove the tart from the springform tin.
