Tastic Heritage Day Tomato Bredie with Jamie-Lee

Tastic Heritage Day Tomato Bredie with Jamie-Lee

Serves 4-6 people

Prep time: 20 minutes

Cooking time: 1 ½ - 2 hours

For the Tastic Rice
1 cup                          Tastic Rice
6 cups                        water
1 tsp                           salt
For the stew
2 tbsp                        oil
1 kg                            lamb of choice ( for stewing / slow cooking )
2                                  onions, chopped
3 cloves                    garlic, chopped
1 thumb                    ginger, chopped
1                                  chilli, chopped
½ tsp                          black peppercorns, ground finely       
½ tsp                          cloves, ground
4                                  cardomom pods
1 stick                        cinnamon
2 tins                          chopped tomatoes / 1kg fresh tomatoes, chopped
2 large                       potatoes, peeled and cut into bite size chunks
1 tbsp                        sugar
For the bredie, toss the lamb in the oil, and season well with salt and pepper. Brown in a hot pan on all sides, and remove.
In the same pot, without cleaning, add the onions and cook until softened on medium heat. Add another splash of oil if needed. Add the garlic, ginger, chilli, and spices, and cook out for a further 2 minutes.
Reduce the heat to low, add ½ cup of water, followed by the tomatoes, potatoes and sugar. Add a pinch of salt, and slow cook for roughly 1-2 hours until the lamb and potatoes have softened. Taste, and adjust seasoning as required.
To make the Tastic Rice, place the rice, water and salt in a pot. Bring to the boil uncovered. Boil on the stovetop for 20-25 minutes. Remove from the heat. Drain off excess water and serve.
Serve the Tomato Bredie on a bed of perfect and fluffy Tastic Rice, and enjoy!
