Woolworths cheesy tuna bake

Serves 6
Prep 25 minutes
Cooking 40 minutes

3T salted butter
3T flour
4 cups milk
200g cheddar cheese, grated
3 X 170g Woolies canned shredded tuna, drained
Salt and freshly ground black pepper to taste
3 spring onion stalks, thinly sliced
140g sun-dried tomato pesto 
500g penne pasta, cooked
1 cup bread crumbs

Add your butter to a pot placed on a medium heat. Once the butter is melted add the flour and begin whisking to prevent any lumps from forming. After about 45 seconds the mixture should have a slightly nutty smell, that’s when you can begin pouring in your milk, gradually adding it in as you continue to whisk. 
After all the milk has been added allow the white sauce to just begin to simmer before adding the cheese in stages as you stir it in, dissolving the cheese into the sauce before adding the next amount of cheese, this ensures the sauce with be velvety smooth. Season with salt and freshly ground black pepper. 

Add the tuna to the sauce along with the spring onions before combining with the cooked pasta. Pour the mixture into an oven dish then swirl the tomato pesto through. Before placing in the oven sprinkle the breadcrumbs over to form a crispy top. 
Bake in an oven preheated to 180C for 30 minutes or until the top is perfectly golden and the sauce is bubbling. 
You’d want to make extra of this dish because it tastes even better the next day.
